EasyAir for pastry products
EasyAir has side racks with double fittings for GN 1/1 and EN 600x400 (with a 74 mm gap between the trays) that can be replaced with EN 600x400 fittings with an 80 mm gap, ideal for pastry products.
Even cooking is guaranteed by a 2-speed fan with automatic rotation inversion.
EasyAir for delicatessens
EasyAir is also perfect for delicatessens thanks to the possibility of convection, steam and mixed convection/steam cooking as well as smoking. Slow cooking of large roasts is possible with the maintain/resting function.
Probe at the core
Version available with core probe connected to temperature controller with digital display for constant control of product core temperature.
Ideal for medium and large-sized cuts of meat, it allows the desired level of cooking to be achieved by setting target temperature in the centre of the product.
The unique humidity control system installed on EasyAir ovens allows you to monitor the climate conditions in the cooking chamber and promptly intervene maintain the correct degree of hydration at all times.
Moisture is removed by means of a butterfly valve, which allows all the excess moisture in the chamber to be extracted quickly. This valve is only opened when it is needed, thus eliminating the loss of heat.
