Olivo Country Club is ‘a country salon melding harmony, modernity and romanticism’. This is Alessandra Boselli’s ambitious project in Bassano in Teverina (VT) in the heart of the Tuscia area, a new country guest house concept welcoming guests to a venue which is part farm, part holiday home and part setting for total-immersion local experiences. The beating heart of this sophisticated venue is Salvo Cravero’s restaurant. Born in Molise, Chef Cravero now calls Viterbo home and shares a philosophy with Olivo Country Club: exalting the flavours of the Tuscia countryside and focusing on raw materials, with taste, style and conviviality always top priorities. His is a brilliant career which has included a period at historic Roman restaurant Le Sans Souci (1 Michelin star) and at the helm of L’Etoile di Vetralla, a gourmet restaurant which found its way into the main culinary guides right away as well as consulting and training work at the Gambero Rosso Academy. He has also been appointed Ambasciatore del Gusto Doc Italy – Italian taste ambassador – on the strength of his ability to breathe life into unique taste experiences. Like this wild fennel macaron and salmì beef pâté accompanied by a green sauce sponge and anchovy mayonnaise, an incredible dish we have been lucky enough to taste. Proof of the results that can be obtained with Giorik ovens, above all when used by top class talents.
