In the centre of Fondi, a town in the province of Latina, is CO.CO. Cookery/Cocktail, a restaurant with a menu crafted exclusively for fish lovers. Its position, just a couple of miles from the Tyrrhenian Sea, means it has daily access to the freshest fish for its creative offerings. In one of the hottest locations in town, where design and architecture have come together to create a luxurious, exclusive and unconventional loft space, CO.CO. Cookery has made a name for itself for two reasons: the chef’s personal take on sushi and its selection of cocktails, which can be enjoyed before or after dinner or, as we did, even during.

Ingredients come first.

One of our favourite dishes is the seared tuna fillet with rocket nests, a hint of burrata cheese and dried tomatoes. A recipe whose simplicity comes from the very depths of the sea. A quick look at the menu reveals that at CO.CO. Cookery it’s the ingredients that make the difference and something as simple as spaghetti and clams becomes a gourmet dish. One of the things we particularly like about this place is that most of the items on the menu are “fluid”, meaning they can be ordered as a starter, main course or with one of their stunning cocktails. Like the fried swordfish balls served on potato purée with a sprinkling of black olive powder. The fish balls are crisp and dry, thanks to the fryer, part of the UNIKA hob which the chef chose for the kitchen. And when combined with our MovAir oven, the result is extraordinary.
